  • 25 brioches  
  • 250g butter salted 
  • 125g brown sugar
  • 375g flour 
  • 50g egg
  • 200g mixed nuts (hazelnut, pecan, almond, pistache)
  • 200g dried cranberry
  • 5 pieces of fresh figs

  • Thaw the Brioche
  • Create a cookie dough of the sugar, butter flour and crushed nuts 
  • Shape the cookie dough by using a dough sheeter untill 1.5mm thick and cover the bottom of the bakingmould
  • Shape the Brioche dough in untill it reaches a diameter of approx. 10 cm  
  • Brush the cookie dough with water and place the Brioche on top of it 
  • Eggwash the dough and cover it with a mixture of nuts and dried cranberrys
  • Let it proof for 70 minutes at 28°C / 80% humidity
  • Dry for 10 minutes and bake the products for 11 minutes at 190°C
  • Cover it with dusting sugar and decorate with the fresh figs
